    Spanish Cauliflower Rice

Let me just say this… mexican food is my kryptonite! Before starting Paleo we ate Spanish rice weekly! I have had a huge craving for some Tex-Mex style Spanish rice lately and I just had to come up with something that would work! Some people get really freaked out at the idea that cauliflower could taste like anything but cauliflower. I am here to tell you that going Paleo has opened my eyes to the many uses of cauliflower! Since cauliflower does not have a strong flavor it works really well in all kinds of recipes! We have made mashed faux-tatoes with cauliflower, cauliflower crust pizza, and now I am…

    Chia Seed Jam

Recently we started buying the chia seed drinks and squeeze packs by MammaChia and my kids love them! The only problem is they can be quite expensive when two kids (and sometimes mom) want them every day! We picked up our bountiful basket last weekend and I received 8 pounds of fresh strawberries. I dehydrated 4 pounds and the kids ate two pounds fresh. With the remaining 2 pounds we decided to try our hand at some Chia Seed Jam. Most of the recipes I was finding online added regular sugar or maple syrup… neither of which I had on hand. I recently bought some coconut palm sugar and was…

    Paleo Fajitas!

My husband and I try to cook on the grill every weekend. We cook enough to eat for the entire week and incorporate into our dinner and lunch meals. This weekend we grilled some seasoned skirt steak to slice up for Fajitas! We also use the same skirt steak in our omelets and to top our salads with! I use either Montreal Steak Seasoning (Not super Paleo) or Trader Joe’s 21 Seasoning Salute to season our beef with! This is a simple and easy to put together meal that we eat often because we loved traditional fajitas! Paleo Fajitas Ingredients:  Grilled skirt steak or other flat piece of beef. Guacamole…

    Paleo Hack: Chipotle Chicken Bowl

One of my favorite Pre-Paleo restaurants is Chipotle Mexican Grill. I would get a Chipotle Chicken bowl full of black beans, corn, sour cream, chicken, guacamole and my all time favorite food: cilantro lime rice! For 8 months I haven’t stepped foot in a Chipotle and the craving for a Chipotle chicken bowl hit hard this week! I was looking through my Paleo recipe books and NomNom Paleo had a stir-fry rice recipe and I had the thought that it would be simple enough to make a cilantro and lime “white rice” recipe out of cauliflower! I made it and the whole meal took MAYBE 10-15 minutes to prepare and…

    Healthy snacks for traveling!

Paleo Healthy Snacks for traveling! As some of you know we travel a lot! If you don’t know you can check out our travel blog HERE. Before we started eating Paleo foods we would just eat whatever we found at convenience stores or gas stations. This lead to us feeling tired, sick and ran down during and after our trip. In September, after two years of eating typical road-trip foods we were sick of it! Our weight was up significantly from the years before, our bodies were sluggish and tired and the kids were cranky and their behavior was all over the place. We decided then that we would always…

I was so surprised to see these beauties come out of my oven today! You will…

    Dehydrated Watermelon

Dehydrated Watermelon When I was a kid we always had an abundance of fruits and vegetables! My mom used to have this HUGE garden that she would tend to everyday and we would visit the farmers market and roadside fruit stands! One of our favorite ways to preserve foods was to dehydrate them! My siblings and I would always sneak into the dehydrated before the fruits were done and eat them! [wp_ad_camp_2] We dehydrated a ton of foods, but the one item that stood out most in my childhood memories was dehydrated seedless watermelon! The texture and taste of the dried watermelon is unlike any of the other fruits! We like to…
